Windward Community College culinary program offers Mother's Day brunch buffet

KANEOHE, Oahu Windward Community College culinary students are busy this week preparing for their annual Mother's Day Brunch Buffet on Mother's Day, May 8.

According to chef instructor Diane Nazarro, events like this are a great way to give students the hands-on experience of doing a high-level catered affair. She adds, "The students really look forward to this event because it breaks up the usual day-to-day routine of our foodservice program at the school cafeteria."

Nazarro recently received an honorary certificate from the City and County of Honolulu, which recognized her many years of dedication to Hawaii's youth. In describing Nazarro's work with the students, City Councilmember Barbara Marshall said that if you "take your problem children labeled as dropouts, add in extra classroom hours, a cup of humility, several ounces of tough love, you would get Chef Diane Nazarro. She has transformed the lives of hundreds of youth."

Chef Diane Nazarro and her culinary students have come up with a spectacular menu for this special occasion on Mother's Day. To get you started, there will be an omelet station where made-to-order creations are prepared by the culinary students. You'll also find your local favorites at the salad/cold bar, such as potato-macaroni salad, fresh ahi and tako poke, namasu, cucumber kim chee, and an assortment of pasta and green salads, as well as fruit and cheese platters.

As you make your way through the buffet line, you'll discover an array of hot entrees, including Eggs Benedict and pork link sausages, roasted turkey and Portuguese sausage stuffing, roasted prime rib of beef and shrimp with sun dried tomatoes penne pasta.

Finally, you must taste one of chef Nazarro's signature breads and desserts. You'll have your choice of delicious cranberry nut, poi-banana and pumpkin bread, as well as a full assortment of those sugar-laden treats we just can't seem to resist.

Prices start at $25 per person; $12.95 for children eight years old and under; and toddlers under three years old are free. Seats are limited, so plan ahead and call today.
